Liver And Onions
This gluten free recipe for healthy and great tasting liver and onions will surprise you. It is an easy and great recipe to enjoy the incredible benefits of liver and onions.
2 pounds sliced beef liver
1 1/2 cups milk
2 large onions, sliced into rings
3 slices of bacon, sliced
2 cups all-purpose gluten free flour
salt and pepper to taste
-Rinse liver slices under cold water, pat dry and place in a medium bowl. Pour in enough milk to cover. Soak for 2 hours. This takes the bitter taste of the liver.
-Saute`bacon in a large skillet over medium heat. Separate onion rings, and sauté. Remove onions and bacon.
-Season the flour with salt and pepper, and put it in a shallow dish.
-Drain milk from liver, and coat slices in the seasoned flour mixture.
-Turn the heat up to medium-high, and place the flour coated liver slices in the pan with the bacon fat. Cook until brown on the bottom. Turn, and cook on the other side until browned.
-Add onions, and reduce heat to medium. Cook a bit longer to taste. We like the liver just barely pink on the inside when you cut to check.
Calves liver rinsed and patted dry.
Soak in milk
Fry in bacon grease
Serve topped with fried onions and bacon
