Hard Boiled Eggs

The simple, classic Hard Boiled Eggs, are one of the easiest and finest edible delights known to man, and full of perfect protein and have just 70 calories each.

The Dr Suess classic “Green Eggs and Ham” has always been favorite childhood book for generations. Did you know there really are chickens that lay green eggs?

Our Araucana chickens are sometimes called the "Easter Egg Chicken". This unusual breed gets its name from the Indian tribe of Chile where they were first discovered. Our Araucana chickens lay beautiful colored eggs of green and blue with shades ranging from deep olive to turquoise and we have fun gathering them to find out what color or hue they are going to be, as it’s always a surprise. These Easter Eggs that are naturally colored green and blue amaze our friends and have made great "show and tell" projects for our grandkids at school. Baby chicks even come in all colors, plain and fancy, just like the adults. They are a unique breed and great fun to have when the colored eggs start coming.

Boiling an Egg

The simple, classic Boiled Egg, is one of the easiest and finest edible delights known on man, full of nature’s perfect protein and with just 70 calories.

Fresh eggs will not peel very easily. An egg that is just a day or two old is almost impossible to peel. The shells will peel more easily as the egg ages. It is best to use eggs that are at least 2 weeks old for hard boiling and easy peeling. Hard boiled eggs that are cooked slowly over low heat and not boiled will be much more difficult to peel.

Place eggs in pan of cold water. Bring to a rolling boil. Reduce heat and simmer for 10 minutes. Then drain the eggs and cover with cold water.

TIP: To peel eggs easier: After draining the hot water, shake the pan so the eggs crack a bit. Then, add cold water. The cold water will seep in the cracks and expand the shell, making peeling easier. Chill for a few minutes in the cold water until the egg is completely cooled. This is an extremely important step. If the egg is not chilled immediately after cooking an unsightly dark greenish ring will eventually appear on the outside of the yolk.
